Old Fashioned Sweet
Green Tomato Pie
6 Tbs. Flour 1 tsp. Cinnamon 1/2 cup + 1/2 tsp. Sugar 3/4 cup Light Brown Sugar, packed 1 Tbs. Fresh Lemon Juice 2 Tbs. Butter 4 cups Green Tomatoes, finely chopped 1/8 tsp. Salt & ground White Pepper 2 Tbs. Heavy Cream 2 (8") prepared Pie Crusts (top & bottom) |
Preheat oven to 425 degrees. Mix flour, brown sugar, 1/2 cup sugar, cinnamon, salt and pepper. Sprinkle 2 tbs. mixture across pie crust in pan. Add tomatoes and lemon juice to mix, toss to coat. Spoon mixture into pie shell. Dot with butter. Cover with top-crust, crimping edges tight. Make four small slits in center of top crust to vent. Brush with cream, sprinkle 1/2 tsp. sugar over cream. Bake 12 mins. Reduce heat to 325 degrees for 30-40 mins. Remove from oven and cool 1 hour before serving. |
